St Maarten feeds you better than any island its size has a right to. Roughly 300 restaurants share 34 square miles, and the French half genuinely cooks like France with better fish. Grand Case: the island's dining capital

One beach road on the French side with more good kitchens per meter than anywhere else in the Caribbean. If you eat out twice on your trip, both meals should probably happen here.

Le Pressoiris the special-occasion room: French technique, Caribbean fish, a creole house from the 1870s. It's the reservation we make first for honeymooners, and it books out in high season, so plan a week ahead. L'Auberge Gourmandeacross the street plays the same league with a more classic French menu. For something between fine and casual, Ocean 82puts you directly over the water with a wine list that outperforms its prices.

And then there are the lolos: open-air barbecue stands clustered at the center of the village. Talk of the Townand Sky's the Limitgrill ribs, chicken, and lobster at prices that look like typos next to the fine-dining menus fifty meters away. Same street, same evening, pick your mood.

Simpson Bay: seafood and long dinners on the Dutch side

The Dutch side's dining hub, and the practical choice if your villa is near the airport, Pelican Key, or Cupecoy. Marigot and the French west

The French capital does elegant waterfront dining. La Vie en Rose, upstairs on the harbor front, has been serving classic French cuisine with a view of the bay since before most of the island's restaurants existed. Tropicanaat the Marina Royale is the long-lunch spot: steak frites, cold rosé, boats going by. On market mornings (Wednesday and Saturday), the stalls by the waterfront serve the cheapest good creole plate on the island.

Orient Bay and the east

Around Orient Bay the theme is toes-in-sand lunches and one standout dinner house: Sol é Luna, a romantic hillside villa-restaurant in Mont Vernon that competes directly with Grand Case for the island's best table. Book it for a last-night dinner. On the beach itself, the club restaurants handle lunch; pick one with loungers and make an afternoon of it.

Practical notes before you book

Three things surprise first-time visitors. First, reservations matter here: the good Grand Case rooms fill up days ahead from December through April. Second, the bill works differently per side. French-side restaurants include service by law (look for "service compris"), while Dutch-side places often add 15%; the details are in our currency and tipping guide. Third, dollars work everywhere, but paying in euros on the French side usually beats the house exchange rate.
